Time for the kiwi christmas cake... PAVLOVA! 

No... it's not Aussie! haha

Pavlova

  • 6 egg whites large

  • 3 tsp white vinegar

  • 3 tsp vanilla essence

  • 1 pinch salt

  • 3 cups caster sugar

  • 3 tsp cornflour

  • 4 tbs boiling water

Serving

  • Fresh fruit - including strawberries or of course Kiwifruit

INSTRUCTIONS

You honestly won't believe how easy this is... but better still is how amazingly it works!

Prep

  1. Place all ingredients into a large mixing bowl, adding the boiling water last.  

  2. Beat on full speed until very stiffThis is when you turn the whisk upside down, and those peaks hold proudly! They should point straight up without collapsing at all (or maybe a little bit just at the very tips). The mixture is thick and heavy! 

  3. Spread on a pavlova plate or baking sheet and cook for 15 minutes at 160C,

  4. Then approximately 1 hour on 150C.

  5. Leave to cool in the oven with the door ajar.

  6. Top with massive amounts of whipped cream and fruit

It's big. It's impressive. And it's so earnestly kiwi-classic that it's sure to please everyone around!

Score extra marks for turning up to your mates BBQ with this baby in a sistema cake box (Because you know everyone else turned up with a packet of bickies... Rubbish.)
